Dahab Falafel Co. LLC, was created by Asi Adorian in 2022. Asi grew up in Israel in the 1970s and 80s. He then traveled to and lived in many places including Europe, South America, and New York City, until settling in New Hampshire in 1999. Growing up in the Middle East he was exposed to many different cultures, customs, and, of course, a great variety of different, delicious, and interesting foods.
It was not until he had been away for a few years that he started missing the food varieties he had taken for granted back home. Soon, he started going to Middle Eastern restaurants hoping to recreate the experience of good, simple street food. While many places offer their versions of falafel, hummus, babaganoush, and more–and while it was delicious–it was not quite the taste he sought.
In 1996, a childhood friend and his wife, now living in Canada, came to visit Asi in New York City. They shared a love and longing for a certain little hummus restaurant located in the heart of the market in the old city of Acer. Asi was determined to impress his friend and recreate for them that soul-lifting gastronomic experience right there in his tiny basement studio apartment on the Upper West Side. Out he went hunting for the right ingredients and side dishes, as well as his very first kitchen appliance: a blender. The barely edible glue-like paste he produced was graciously consumed by the Canadian guests/guinea pigs. They, much to Asi’s surprise and relief, survived the ordeal.
After moving to New Hampshire in the late 90s he started researching recipes and experimenting with ingredients. He would force-feed friends and family, examining their reactions to the different versions of food. It took a long time and a lot of work until finally, he could say that his food tasted the way he believed it should and was ready to be shared with the public.
Middle Eastern food in its nature is not overly sophisticated; it consists of basic ingredients, like chickpeas, sesame, eggplant, flour, herbs, and spices but it is the quality of the ingredients and the cooking techniques that turn simple into magic.
